But when we take a closer look at the label, the contents, and how it\u2019s made &#8211; pasteurized fruit pur\u00e9e has more in common with a fruit <\/span><i><span style=\"font-weight: 400;\">product<\/span><\/i><span style=\"font-weight: 400;\"> than actual fruit.<\/span><\/p>\n<h3><\/h3>\n<h3><\/h3>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h3><b>What happens to fruit during pasteurization?<\/b><\/h3>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Pasteurization involves heating fruit to high temperatures to kill off bacteria and extend shelf life.
